Six parts of this series have traced the story of Indian food through 2 million years of evolution, four genetic streams, ancient texts, philosophical arms races, colonial famines, state-by-state data, class dynamics, and the religious colour of the plate. Part 7 is the final chapter — and it lands where all food stories ultimately end: in the body. The biology does not care about the myth. It does not care whether vegetarianism is spiritually superior, historically ancient, or socially prestigious. It cares about protein, iron, Vitamin B12, and whether the food entering the body provides what the body needs to function. On that measure, Indian food and nutrition data has something urgent to say — and India has not quite finished hearing it.

Meat in the Heat | Indian Food and Nutrition — What the Plate Is Actually Doing to the Body
Indian food and nutrition is a subject that sits at the uncomfortable intersection of culture, identity, and science — and the science, read clearly, does not flatter the national self-image. A country that leads the world in diabetes without leading the world in obesity. A country where more than half of women of reproductive age are anaemic.
India's heaviest spicing, its most complex meat-cooking traditions, and its highest non-vegetarian rates all cluster in the same place: where it is hottest. This is not a coincidence.
There is a pattern on India's food map that makes more sense once you understand the biology. The variable is not temperature alone — it is temperature combined with humidity. Bacterial growth in meat accelerates fastest in warm, moist conditions. A dry desert at 45°C desiccates meat. A humid coastal kitchen at 32°C cultivates bacteria. This is the relevant distinction.
Andhra Pradesh, Telangana, Tamil Nadu, and Kerala sit in the zone of year-round warmth and high humidity — the ideal conditions for meat spoilage and therefore the ideal conditions for the development of heavy, antimicrobial spicing traditions. They are also, without exception, above 90% non-vegetarian. The Northeast — cool but persistently humid — could not rely on heat to dry meat, so it smoked and fermented instead. Different preservation technology, same biological pressure.
The arid northwest — Rajasthan, Gujarat, Haryana — has extreme summer heat but low humidity and a long dry season. Meat in a desert environment can be preserved through drying far more easily than in a coastal kitchen. The spicing incentive is lower. But the vegetarian belt's vegetarianism is not primarily a climate story at all — it has a far more specific explanation in Jain merchant communities, Brahminical dominance, and the Arya Samaj movement, all of which this series covered in Part 3. Climate shaped the spice traditions. History shaped the food identity.
A country where 47 to 73 percent of the population is Vitamin B12 deficient — a nutrient found almost exclusively in animal products. These numbers exist alongside India's extraordinary culinary tradition, its genuine philosophical depth around food, and its real and remarkable vegetarian cuisines. They do not cancel each other. They are simply both true — and Part 7 holds both truths at the same time, without flinching from either.
This is not proof of a simple causation. The caste structure, the geography, the historical forces documented in earlier parts of this series all play their roles. But the climate connection is real, documented across food cultures globally, and rooted in a biological logic so simple that it is surprising how rarely it gets mentioned: in a hot climate, meat spoils. And the way you prevent meat from spoiling — before refrigeration, before the supply chain, before the cold storage facility — is to cook it with spices that kill bacteria.
SPICES WERE NOT ABOUT FLAVOUR — THEY WERE ABOUT SURVIVAL
The popular understanding of Indian spicing is that it reflects a love of flavour — that Indian cooks, over millennia, developed a sophisticated palate for complex, layered taste. This is true, but it is the second-order truth. The first-order truth is simpler and more urgent: spices kept people alive.
Turmeric contains curcumin, a compound with well-documented antimicrobial properties against a range of bacteria and fungi. Cloves contain eugenol — one of the most potent antibacterial compounds in the natural world, effective against Salmonella, E. coli, and Listeria. Black pepper contains piperine, which has both antibacterial and antifungal activity. Cinnamon bark contains cinnamaldehyde, which inhibits the growth of foodborne pathogens at concentrations achievable in cooking. Chili pepper's capsaicin slows bacterial growth at the temperatures found in a warming tropical kitchen.
A cook in 15th-century Andhra Pradesh who added turmeric and cloves to her meat curry was not following a recipe for aesthetic reasons. She was applying, through centuries of accumulated empirical knowledge, a biological preservation system that worked — imperfectly, incompletely, but significantly better than doing nothing. Heavily spiced food in a hot climate spoils more slowly than unseasoned food. The populations that spiced heavily survived better than those that didn't. The spicing tradition is natural selection, expressed through cuisine.
THE FERMENTATION ALTERNATIVE
Spicing was not the only preservation strategy available to a warm-climate food culture. Fermentation — controlled bacterial action that produces acid, alcohol, or other compounds that prevent spoilage — was the parallel system, and India used it extensively across every region.
The idli and dosa of South India are fermented rice-and-dal preparations — the fermentation process both preserving the batter and improving its digestibility. The kanji of Tamil Nadu and Kerala is fermented rice gruel, sour and nutritious, which keeps far longer than fresh cooked rice. The ngari of Manipur and the tungtap of Meghalaya — the fermented fish that define northeastern food culture — are preservation technologies developed specifically for a climate where fresh fish becomes dangerous within hours of being caught.
Fermentation and spicing served the same purpose through different mechanisms. Both were responses to the same environmental pressure: heat makes food dangerous, and a population that cannot preserve its food safely will not survive. The extraordinary complexity of Indian preservation traditions — the range of fermented preparations, the depth of spice combinations, the specific application of different spices to different proteins — is not the product of a culture that loved flavour more than other cultures. It is the product of a culture that had a particularly urgent survival problem to solve.
DID YOU KNOW? A landmark 1998 study by Jennifer Billing and Paul Sherman at Cornell University — "Antimicrobial Functions of Spices: Why Some Like It Hot" — analysed 4,578 meat recipes from 36 countries and found a direct correlation between a country's mean annual temperature and the number of spices used per recipe. Hotter countries used more spices. Recipes from the hottest countries were most likely to include spices with the strongest antimicrobial properties. India — the world's hottest large country with the world's most complex spicing traditions — sat at the extreme end of both axes. The study confirmed, with data from across the globe, what Indian cooks had known empirically for 4,000 years. |
THE CLIMATE-FOOD MAP OF INDIA
WHAT THE BODY NEEDS IN THE HEAT
There is one more dimension to the climate-food relationship that deserves mention: what the body actually requires when it is working hard in a hot environment. Physical labour in high temperatures produces significant losses of sodium, potassium, and other electrolytes through sweat. It also produces a higher requirement for protein, because the body breaks down muscle tissue more rapidly under heat stress and physical exertion.
The traditional diets of India's working communities in its hottest regions reflect this biology. The buttermilk — chaas — that appears in Rajasthani and Gujarati food culture is an electrolyte replacement drink before the concept of electrolyte replacement was articulated. The salted lassi of Punjab serves the same function. The heavy protein content of a Chettinad meat curry is not just flavour — it is fuel for the kind of physical work that the communities who developed this cuisine performed daily in a hot and demanding climate.
India did not become the most heavily spiced meat-cooking culture in the world because Indians loved flavour more than everyone else. They spiced because they had to. Climate made it necessary. Centuries of refinement made it art.
The next chapter asks the final biological question: now that we know what India has historically eaten and why, what is the actual nutritional state of the country? The answer — in terms of protein, B12, iron, and the specific deficiencies that follow from a food culture built around carbohydrates and a vegetarian aspiration that outran the nutritional knowledge to sustain it — is the last piece of the story, and perhaps the most urgent.

The Protein Gap
India is the world's largest democracy, the world's most populous country, and the world's largest producer of milk. It is also running one of the most serious hidden nutritional deficits on earth.
There is a number that does not appear in most conversations about Indian food, and it should. Fifty-three percent. That is the proportion of Indian women of reproductive age who are anaemic, according to the National Family Health Survey of 2019–21. Not a small community. Not a marginal statistic. More than half of India's women — the people who carry pregnancies, produce breast milk, and disproportionately bear the physical burden of agricultural and domestic labour — do not have adequate iron in their blood. And anaemia, in India's case, is not primarily a disease. It is a diet problem. Specifically, it is the consequence of a diet built around carbohydrates and plant-based iron — which the human body absorbs at a fraction of the efficiency of iron from animal sources — in a country that has partially convinced itself that animal products are spiritually problematic.
THE B12 CRISIS HIDING IN PLAIN SIGHT
Vitamin B12 is essential for neurological function, red blood cell formation, and DNA synthesis. Its deficiency produces anaemia, nerve damage, cognitive impairment, and — in pregnant women — increased risk of neural tube defects in the foetus. These are not mild inconveniences. Severe, prolonged B12 deficiency causes irreversible neurological damage. And it is almost entirely preventable.
The problem is where B12 comes from. It is produced by microorganisms and is found in meaningful quantities almost exclusively in animal products: meat, fish, eggs, and dairy. Plant foods contain no B12. Fermented foods and certain algae contain trace amounts, but not enough to meet daily requirements in someone relying on them as their primary source. For a population with a large vegetarian cohort — and a larger cohort that eats animal products infrequently — the arithmetic is unforgiving.
Studies across Indian populations consistently find B12 deficiency rates of 47% to 73% depending on the community, the region, and the dietary pattern. Among strict vegetarians, the rates are higher. Among urban vegetarians who have moved away from traditional dairy consumption toward packaged and processed food, the rates are higher still. India is running a B12 deficiency epidemic of genuinely alarming scale — and it is doing so quietly, because acknowledging it would require a conversation about vegetarianism and nutrition that the country's dominant cultural narrative is not yet prepared to have.
DID YOU KNOW? A single egg contains approximately 0.6 micrograms of Vitamin B12 — about 25% of the daily requirement — along with complete protein, iron, zinc, and choline. Two eggs per day would make a meaningful dent in India's B12 deficiency at a cost of approximately ₹14–20. This is the cheapest, most accessible nutritional intervention available. It is also the food that a significant proportion of aspirational, middle-class, and upper-caste India has classified as non-vegetarian and therefore socially unacceptable. The distance between the problem and the solution is a cultural decision, not an economic one. |
THE IRON EQUATION — WHY PLANT IRON IS NOT THE SAME
The 53% anaemia rate among Indian women is not simply a consequence of eating too little iron. It is a consequence of eating the wrong kind of iron — or rather, the kind that the human body is less efficient at absorbing. Iron exists in two dietary forms: haem iron, found in meat and fish, which the body absorbs at 15–35% efficiency; and non-haem iron, found in plants, which the body absorbs at 2–20% efficiency, and which is further inhibited by the phytates in grains and the tannins in tea — both of which are dietary staples consumed in enormous quantities in India.
A vegetarian diet can provide adequate iron, but it requires careful nutritional planning, diversity of plant sources, and the consumption of Vitamin C alongside iron-rich foods to enhance absorption. A rice-and-dal diet eaten three times a day, with chai at every meal, does not meet this standard. The tea alone — consumed with meals by hundreds of millions of Indians — significantly inhibits iron absorption from whatever food is eaten alongside it. The British gave India its tea habit. It is possible, with some irony, that the tea habit is partly responsible for India's anaemia epidemic.
THE CONVERSATION INDIA HASN'T HAD
None of this is an argument against vegetarianism as a personal or philosophical choice. A well-planned vegetarian diet — diverse, adequately supplemented, thoughtfully constructed — can be nutritionally complete. The Indian vegetarian tradition has produced extraordinary cuisines, sound ecological practices, and genuine philosophical depth.
What it is an argument against is the pretence that India's current diet — for the majority of Indians who are not wealthy enough to eat a well-planned vegetarian diet and not informed enough to supplement correctly — is nutritionally adequate. It is not. The anaemia data says so. The stunting data says so. The B12 deficiency data says so. A country that has organised its food identity around a vegetarian ideal and then failed to ensure that ideal is nutritionally supported has made a cultural choice with physiological consequences — and those consequences fall disproportionately on the poorest, the youngest, and the most vulnerable.
The honest conversation India needs to have about food is not about which religion's food rules are correct, or which caste's traditions deserve more respect, or whether the Vedas prescribed beef. Those conversations are fascinating — and this series has had them, at length. The conversation it needs to have is simpler and harder: what are people actually eating, is it enough, and what would it take to make it adequate? The answer, almost certainly, involves eggs.
EPILOGUE
What the Plate Says About Us
I came back from that European business dinner and started reading. That was the beginning of this series — a colleague's well-meaning assumption, a vegetarian meal I did not ask for, and a nagging feeling that the gap between what had just happened and what I knew to be true about India was worth examining properly.
What I found, reading across two million years of human food history and six thousand years of Indian civilisation, was not a single story but a layered one — archaeology beneath philosophy, economics beneath theology, climate beneath culture, class beneath religion. Every time I thought I had found the real reason India eats what it eats, there was another reason underneath it.
The Vedic priests did not become vegetarian because they found compassion. They became vegetarian because their philosophical rivals were gaining ground. The cow did not become sacred because it was loved. It became sacred because the living cow ploughed more land than the dead one. The middle class did not give up meat for spiritual reasons. They gave it up to fit in with the social tier above them. And the world did not arrive at its image of India as the land of the lotus-eater by looking carefully at what India actually eats. It arrived there by looking at the communities with the loudest cultural voice and the greatest international visibility — and those communities happened to be, for historically specific and entirely explicable reasons, vegetarian.

I am a Rathod. My ancestors rode into battle and ate what they hunted. My grandfather farmed in a Gujarat village and ate meat quietly, when he could afford it, at the back of the house. My father cooked on Sundays in a small town with the windows half-closed because the neighbours must not know. I ate my first chicken burger standing on a pavement in Baroda, unremarkable and entirely without incident. I understood, for the first time, just how vast the distance was between the India I had grown up inside and the India that actually existed.
Somewhere between my grandfather's village and my colleague's conference dinner, a story got fixed in the world's imagination — a story about a vegetarian civilisation, a spiritual people, a culture that had transcended the animal appetite. It is a story with real roots, real philosophical depth, and real community behind it. It is also, as a description of what 1.4 billion people actually eat, significantly incomplete.
Seventy-one percent of Indian women eat non-vegetarian food. Seventy-eight percent of Indian men. The Northeast is 99% non-vegetarian. Tamil Nadu is 98%. West Bengal is 98%. Biryani — a meat dish — is the most ordered food in India every year since 2017. The Vedas described beef at the highest table. The Charaka Samhita prescribed it as medicine. The Mughals built the most elaborate meat kitchen in the history of the subcontinent. The Portuguese brought the chili from the Americas and India adopted it so completely that most people assume it has always been there.
The other side of the plate
The argument of this series has been about what India actually eats, and why. It would be dishonest to make that argument without acknowledging the costs on the other side of the plate. Livestock production contributes approximately 12–17% of global greenhouse gas emissions, drives a disproportionate share of deforestation and freshwater consumption, and involves — at industrial scale — conditions of confinement and suffering for approximately 80 billion land animals killed for food every year. India's per-capita meat consumption remains among the world's lowest, and most of its traditional meat-eating is small-scale and local rather than industrial. But the direction of travel is upward, and the environmental arithmetic does not improve with scale. The honest conclusion of this series is not a prescription — eat this, avoid that. It is an observation: food is never simply a personal choice. What lands on your plate is the product of evolution, history, philosophy, economics, climate, and culture working simultaneously. Knowing that is the beginning of eating thoughtfully. What you do with it is yours to decide.
The vegetarian story is real. The non-vegetarian reality is larger, older, more diverse, and considerably less apologetic than the story suggests.
